Chai spiced coconut yogurt

Breakfast is the most important meal of the day for a number of reasons. It allows you to make health your priority. Every time you feed your body, you have the chance of healing it. This decadent breakfast will make you think you are enjoying dessert, while also providing a number of benefits to your body. The ingredients in this treat will aid in digestion (chia seeds), provide fiber and potassium (bananas, coconut meat) which will help relieve any anxiety, calm and balance your mood (healing spices), and provide you with all the protein and minerals you will need to conquer your day (almonds, coconut sugar).

For the coconut yogurt:

Meat from 1 young coconut (about ½ cup)

1 ripe banana (frozen or not)

½ teaspoon: cinnamon, vanilla, nutmeg, cardamon, cloves

1 teaspoon chia seeds (optional)

Blend ingredients in a high speed blender.

For the almond wafer crisp:

1 cup almond pulp

½ tablespoon coconut sugar

½ tablespoon chia egg (chia seeds soaked in water)

½ cup nut milk 

Combine ingredients in a bowl. Place overnight on a dehydrator tray or on the lowest setting in your oven. 

Sprinkle wafer crisp over yogurt and enjoy your decadent treat for breakfast, as a snack or dessert.
